Tropical Traditions Coconut Oil Review

My youngest is allergic to everything. I mean EVERYTHING! Milk, Soy, Gluten, Nuts, Citric Acid, Squash, just to name a few. Feeding him is hard these days, but getting easier as more products that are allergy friendly come into the market. I still find myself making the majority of his foods from scratch and often have to heavily modify recipes. One thing that I couldn’t figure out was how to sub butter. Since Chewy is allergic to both milk and soy, there wasn’t anything I knew of that could replace both and still act as butter in recipes. Tropical Traditions solved that problem for me. Coconut Oil! I was nervous at first as my recipe called for softened butter and the oil was, well, oily! I went forward with a recipe that I’ve posted here. Gluten Free Chewy Oatmeal Cookies.

[Recipe] Sesame Sauce for Chicken

For chicken, pork and more! This was another hit with my kids. I left out the chili paste and it was still just as yummy and a tad more kid friendly. I cheaped out and baked some chicken nuggets for them, added rice and veggies then poured this sauce on top. Let me know how it turns out for you!

I made this last night for dinner and the kids gobbled it up! Super super easy to make!

Recipe: EASY Taco Salad

Ingredients

  • tortilla chips (you don’t need a full bag)
    1 lb ground beef or ground turkey
    1/2 medium onion, chopped
    1 cup salsa
    1 can kidney (or black) beans
    2 teaspoons chili powder
    1 teaspoon cumin
    1/2 teaspoon salt (optional, I left it out)
    1/4 ground pepper
    1 cup shredded cheese
    shredded lettuce

Recipe: Baked Potato Soup

Ingredients

  • 12 slices bacon
    2/3 cup margarine
    2/3 cup all-purpose flour
    7 cups milk
    4 large baked potatoes, peeled and
    cubed
    4 green onions, chopped
    1 1/4 cups shredded Cheddar cheese
    1 cup sour cream
    1 teaspoon salt
    1 teaspoon ground black pepper

Have you heard of them? They had a place in Estes Park and just moved it down to The Orchards in Thornton/Westminster (I-25 & 144th). This place is high class in a super fun and casual setting. I went to the pre-opening with a friend of mine who is good friends with the owner. They have an AMAZING selection of cheeses, wines, pates and more! I snapped this pic with my cell phone of our cheese platter. YUM!

There are five lessons every kid should learn in life. Unfortunately, many kids either don’t learn them until later in life, or at all.
Life Lessons from a Mom

1. Nothing in life is free. I don’t know how many times my kids want to go to McD’s or BK for the “free” toy. Um, no, that toy is $3.99 plus tax, plus my food, plus my time on the treadmill after eating that crap. Not to mention the “why do you always go out to eat” garbage the hubby says to me. “Save money, blah blah blah”. Wait, where was I? Oh yeah, free crap. There are plenty of things the kids want and see either in advertisements, school, etc that they think is totally free. They don’t understand that why someone may offer something for free, there is always, inevitably a catch. Even here, on our own site. I offer free gift cards, toys and more. Are they truly free? Not really. You “pay” me by clicking on an advertisers link on the site, by signing up in our forums, by following me on twitter. Might not be monetary payment, but just as important to a new-ish blogger! So, anyway (sorry, another tangent) tell the kids next time they want that “free” stuff, to earn it. Do chores, don’t whine all afternoon about doing your homework, be nice to your siblings. Those are all ways to “pay” your parents for that “free” crap you want.

The heat is on!  My 1st choice of activities when the mercury starts to rise is floating in the pool, and after that, standing in the pool and after that, swimming in the pool.  I plan on spending every waking second of the 101 degree weather in the pool.  But for those of you who may have a little more tolerance for the heat here are a couple of fun things going on around town this week.

Do your kids love to get mail. Not the mail addressed to “Current Resident” or “Occupant”, I mean mail addressed to them specifically! Mine do for sure. Cartman especially. He gets so upset when I have boxes and letters delivered to me. We’ve signed him up for his own lego magazines and other things, but he was still sad no one was sending him letters. That’s where Buddy Notes came to the rescue!

Do your kids love reading or hate it? Mine love it and to keep them interested we doe series books with rewards or books about a show/movie with rewards as well. In fact, last month in our forums we gave away 5 books to 5 different kiddo’s to get a great start on their summer reading! Books like Wimpy Kid, Percy Jackson and Five Little Monkeys!

When T was in 2nd grade he wanted to tackle Harry Potter. He was still a bit young to read such a long book when he was just mastering the Magic Treehouse books, so we started a rewards program. When he finished reading a book in the series, we bought the movie and the next book. We couldn’t buy the movie until he finished, but he could go see the movie in the theatre. This worked out great with the timing of the movies being released as well. He now times his books to the movies. LOL He JUST finished book 7 this week and its the first time the new movie hasn’t been available when he was done. He’s bummed but already starting his next book to movie series, Percy Jackson! He’s finished the first book, so as soon as it’s on DVD we’ll go get it.

Now I know not everyone may be able to buy every book and movie out there, so other things are recording the movies off TV when they air or renting, or even borrowing from the library! You could borrow the books from the library instead of purchasing them too. Read more on Summer Reading…

11 Great Boredom Busters

If your house is like mine this summer, you have kids saying “I’m soooo boooooooorrrrrrrrrreeeeeeeeeeeeedddddddd” and you reply “then clean your room!” only to find those same kids are suddenly not so bored after all. If you are looking for some ways to keep the kids active (and outta your hair *wink wink*) then check out these great boredom busters from Dr. Zurn and Primrose Schools!

Here are 11 ideas parents can use to keep young minds active during the summer months:

1. Boredom Buster Jar: At the beginning of the summer, sit down with your family and brainstorm a list of activities that can be done alone or that you can enjoy doing together. Encourage your children to share their own ideas and help you decorate and label a simple jar as the family “Boredom Buster Jar.” They’ll feel more involved in the project and more likely to think this is a “neat” idea, if they participate in the creation and idea generation. Next, write everyone’s ideas down on slips of paper and as a group decide which ones should go in the jar. Anyone in the family can pull any idea out of the jar to fight the summertime boredom blues.

2. Stories Alive: It sounds too simple, but reading is one of the most important waysto keep young minds engaged during the summer.Make reading even more fun by finding ways to bring the stories to life. For example, in the book Roxaboxen by Alice McLerran, children create a make-believe town in the desert out of rocks, boxes, and their imaginations. Read the book with your children and then challenge them to create their own town with materials they find in the backyard.

3. Art Start Box: You’ll need to gather basic art supplies-child safe scissors, glue, markers, tape and construction paper. Put them in a special box along with empty oatmeal boxes and paper towel rolls, colorful magazines and bits of aluminum foil. Occasionally add a special surprise like chalk, stickers, or stamp pads so there’s always something new for the children to find. Even if you normally have these supplies around the house, it’s fun for children to know that the Art Start Box is just for them. They’ll probably have some good ideas of other household items that can be recycled to fuel their creative energies.
