There are very few ways to improve on a Shamrock Shake. OK, only one.
Liquor! Add liquor. This Shamrock Martini tastes rather like a Shamrock Shake, except it’s nice and boozy. Perfect for a Friday St. Patrick’s Day celebration. And if you’re as obsessed with mint flavors as I am, you’ll be drinking ’em waaaay past this weekend. You can also use up the rest of your Bailey’s by spiking your coffee on the weekends. A little splash of that stuff in your normal coffee is mighty tasty.
- 3 oz Baileys or other Irish cream
- 3 oz creme de menthe
- 3 oz cold coffee, brewed strong (if you are a parent, just use the coffee still sitting in the pot that you meant to drink this morning)
- half & half
Fill martini shaker with ice. Add Irish cream, creme de menthe, and coffee. Shake vigorously. Fill martini glasses 3/4 full and top with a splash of half & half (if you like a very strong mint flavor, you can skip this step). Serve!
