Pumpkin Pie Mini Poptarts

My new obsession with miniature poptarts is getting about as big as my cakepop obsession! I was cruising google and some of my fave foodie blogs and stumbled upon pumpkin pie homemade poptarts with a maple glaze. Is your mouth watering yet?! Joy The Baker has an AMAZEBALLS blog. Okay, right?! Aren’t you starving and/or drooling about now?

So here I was, minding my own business when I see this post – Now, I like instant gratification, so I said, “Hello Pillsbury pre-made, refrigerated pie crust” and skipped all those boring first steps. Probably tastes much better to have the “from scratch” pie crust dough, but I suffered through a pile of these just fine. 😉

I cut the pie crust into 1.5″ by 2″ rectangles, then plopped a dollop of the pumpkin filling in the center. I covered it with a 1.5″ by 2″ rectangle, but I stretched it just a bit and pinched the edges with a fork and poked the top with the fork too, so the filling wouldn’t just seep out the sides.

The maple glaze was a bit thin, so I used 1.5 cups of powdered sugar and 2 tbsp milk and 1 tbsp maple syrup. I have sprinkles in every shape, size and color, so I added some fall leaves to it and Viola! Mini Pumpkin Pie Poptarts! I was going to put them on sticks, but ran out, so there ya go.

Don’t they look good enough to eat?! Oh, they were too! We ate a fair share of them. The recipe makes a few dozen of the mini variety. If you were to make them full sized they make about 9-10 tarts. I don’t think Carter minded at all that they were mini.
