Nothing makes the house smell like fall and the Holidays like gingerbread! Gingerbread cookies always take the stage, but this year, try gingerbread in its best form… a loaf! This bread is sweet, spicy and will make you want to cozy up by the fire.
- 2½ cups flour
- 2 tsp baking soda
- 1 tsp cinnamon
- 1 tsp ginger
- 1 teaspoon mixed spice (I sometimes use pumpkin pie spice)
- 1 tsp cocoa
- 1 cup milk
- ½ cup light molasses
- ½ cup sugar
- ½ cup butter (or margarine)
- Preheat oven to 350. Mix dry ingredients (minus the sugar) in a large bowl. In a small saucepan, warm the milk, molasses, sugar and butter, stirring frequently. Do not boil. Cool and add dry ingredients. Stir until blended but try not to over stir. Pour into a greased and floured 5x9 loaf pan. Bake for 40 min or until toothpick comes out clean.
