Slow Cooker Guinness Irish Beef Stew

With St. Patrick’s Day just around the corner, everything Irish is on our mind! Whether your ancestors hail from the Emerald Isle or you’re just Irish at heart, it’s the season of Guinness, whiskey, and hearty food. 

This easy Irish Beef Stew has undertones of Guinness and is a perfect meal to fill your belly and warm your heart. Just throw it in the slow cooker and let it simmer all day for a dinner that’s sure to please even your little leprechauns!

What’s Needed

1 1/2 pounds extra lean stew beef
1 teaspoon coarse salt
1 teaspoon ground pepper
2 Tablespoons all-purpose flour
2 Tablespoons canola or olive oil
4-5 medium Yukon gold potatoes – peeled/diced
1 1/2 cups baby carrots – peeled and diced
1 large yellow onion – chopped
2 garlic gloves – minced
1/4 cup tomato paste
4 cups beef broth
11.2 oz bottle Guinness extra stout
1 Tablespoon Worcestershire sauce
1 bay leaf
1/2 Tablespoon dried thyme
Salt and pepper, to taste
Parsley, to garnish

Directions

  1.  Add the beef, salt, pepper and flour to a large mixing bowl. Toss well to coat the beef.
  2.  In a large skillet, heat the oil over medium-high heat.  Reduce the heat to medium and add the flour-coated beef. Brown on all sides.  Set aside.
  3. Turn the crockpot on and spray with a non stick coating spray. Add the potatoes, carrots, onions and bay leaf.
  4. Place the browned beef, tomato paste, Worcestershire sauce, garlic and thyme on top of the vegetables.
  5. Pour the beef broth and Guinness into the crockpot and stir to combine.
  6. Cover and cook for 3-4 hours on high or 10-12 hours on low.  Add salt and pepper to taste.
  7. Serve the Guinness Irish beef stew in a bowl or on top of mashed potatoes.  Garnish with parsley, if desired.
