Tasty Tuesday: Artisan Bread in Five Minutes a Day


A while back, one of my besties lent me a copy of the book, Artisan Bread in Five Minutes a Day by Jeff Hertzberg and Zoe Francois. She explained to me that she loved this method, and the resulting freshly baked bread so much, that she hadn’t been buying bread anymore! I was in a little bit of disbelief-I’d tried the bread-from-scratch route and found it was entirely too time consuming even with my bread machine. But, she assured me this was so effortless that it worth a try. 

So, I whipped up a Master Recipe and let it rest in my fridge, waiting for a nice cool morning to bake my first loaf. And it. was. amazing. Nice crunchy, crackly crust, soft but chewy interior, and a delicate sourdough flavor. 

The title is no marketing gimmick-it honestly took FIVE minutes to mix together the dough in my Kitchenaid. Another five minutes on baking day to pull off a grapefruit-sized chunk of dough and pop it in a pan. That’s it. I kid you not. We have fresh, homemade bread for toast, sammies, serving with dinner, or just snacking-anytime we want it. 

The original book was such a game changer that has spawned additional books-The New Artisan Bread in Five Minutes a Day, Healthy Bread in Five Minutes a Day, Gluten Free Artisan Bread in Five Minutes a Day, and Artisan Pizza and Flatbread in Five Minutes a Day.

Here’s the master recipe, which can be shaped into several forms, including a classic round boule, baguette, or sandwich loaf. Although please don’t just stop at this one! Make ALL THE BREADS! They’re to die for, and even better knowing that it took such a small investment of time. For real, I couldn’t even drive to the corner store and buy that gross, pillowy, full-of-chemicals bread in five minutes.
