For Cinco De Mayo, I wanted to replicate one of my very favorite menu items from one of my very favorite taco joints. Comida, with locations in RiNo and Longmont and a roving, hot pink taco truck named Tina, absolutely nails the street taco concept. While they have over a dozen different, creative tacos, gorditas, and tostadas on the menu, the best one in my opinion is “The Situation”. It’s got slow cooked sirloin, braised in Negra Modelo–a dark Mexican lager with a slightly sweet, malty, nutty flavor–mashed sweet potatoes, and smokey gouda cheese, all piled on a soft house-made corn tortilla.
As I am wont to do, I attempted to “hack” this dish at home, and I think that I have succeeded! Throw this easy recipe in your crockpot in the morning, and come home to tasty shredded beef that’s perfect for topping tacos, tostadas, nachos, or rice! Serve with all your favorite fixings. And definitely try the original at Comida!
