It’s hard to believe with the lovely sunny days we’ve had lately, but pretty soon it will be what my husband and I call “Soup Weather”…that wet, foggy, cold, dark-by-5pm winter weather that just chills you to the bone. And there is nothing quite as warming to the body and soul, as a nice big bowl of homemade soup.
Many of my favorite soups come from my step dad’s Mexican heritage: chile verde, caldo de res, pozole…mmmm! One of the most crowd-pleasing and simple among those is Chicken Tortilla Soup. It’s great for kids because they can D.I.Y. just the way they like it by adding different toppings. (What is it with kids…? You put the cilantro IN the soup, “ewww, what’s this green stuff?” You put it out as a topping for them to add? “oooh I want more of the green stuff!” What gives?) And, with the basic broth you can mix and match whatever other additions you like! The best part? You can whip this together in less than a half hour on the stove top, or let it go all day in the Crock Pot. Your choice!
