This is one of those recipes that takes me right back to childhood summers. My mom woud help us whip up a batch of these cookies first thing in the morning, and by lunch time they were ready to munch! They’re chocolatey, chewy, and the best part is they don’t ever have to go in the oven. Just a few short minutes on the stovetop to melt the ingredients together, and they “bake” in the fridge. They travel well, too. Take them along with your picnic lunch for trips to the pool, hiking, , playground, or amusement park.
If you’ve got a peanut allergy in your household, you can definitely substitute cashew, almond, soy, or sunflower butter. This is an easy-enough receipe that older kids can do it themselves, just be sure to supervise the stove!
