My middle kid–she’s only eleven but she stands a full 2 inches taller than me at 5 foot 7. And she eats. All. The. Time. It’s like a hobby for her. She also happens to be my pickiest eater, and is a typical “don’t touch me” moody adolescent. So when I made this dish and she jumped up from the dinner table and KISSED ME on the cheek? I knew I’d struck gold with this recipe!
Between her, her teenage sister, and their little brother, these kids put away some serious calories. So I’m always looking for recipes that are appealing, filling, thrifty, quick to prepare, nourishing to their growing bodies, and did I mention thrifty? Not exactly an easy checklist to fulfill.
This recipe combines some of my kids’ favorite foods–salsa, tacos, and spaghetti–into one very easy dish that uses common kitchen staples. I’ll bet you have everything you need, already! We love it topped with cheese, fresh cilantro, and diced avocado, but you can use any of your favorite taco fixings!
