Ah, Summer is on its way! It’s staying light out later and gradually getting warmer…enticing us to linger outside on our deck or around our fire pit. Nights like that call for a tasty dessert, highlighting the spring and summer bounty of fresh fruit.
With our south-west facing home, the kitchen gets mighty hot by evening and baking dessert is the last thing I want to do! But as tasty and handy as those no-bake mixes are, they’re absolutely full of artificial junk and loaded with sugar. So, I came up with this very easy, very delicious, and low-sugar parfait that is as rich as any cheesecake but uses only real, natural ingredients and is just as simple as the box.
You can layer any type of fruit or preserves that you like, but we prefer fresh, whole, unsweetened berries. You can use frozen berries too, just let them thaw for a few minutes.
