I found this recipe one night on a random Pinterest binge, and it has quickly become one of our family’s favorites. It’s fast, only a handful of ingredients most of which are staples, and it’s super filling and yummy. It calls for kielbasa, but I have made it multiple times with whatever sausage is on sale at Sprouts meat counter and it’s great with any of them. You could definitely make it with your favorite pre-cooked sausage and frozen diced potatoes too, to cut cooking time. Add in spinach, chopped kale, or chard towards the end of cooking and you’ve got a complete one dish meal.
The original calls for bacon, but I found that both bacon and sausage was a little heavy, so I leave it out. Otherwise, I haven’t changed much. The sauce ingredients sound a little strange but it creates this amazing tangy-sweet flavor that plays off the spices in the sausage. It reminds me of one of my favorite comfort foods ever, my mother’s German Potato Salad. Definitely serve with a German style craft beer…das ist gut!
