Tasty Tuesday: Rotisserie Chicken 6 Ways

I try to limit the number of activities my kids are in, to keep the schedule managable. But with three of them and only one of me, it’s hard to get everyone where they need to be on time. Oh yeah, and I have to feed them. 

Between orchestra practice, dance class, LEGO robotics, student council, and tae kwon do, I rely on quick and easy dinner solutions to fuel my family and maintain my sanity. 

One of my favorite “cheats” is the Costco Rotisserie Chicken. At under $5, (cheaper than a raw chicken, that I’d have to roast myself!) it’s a delicious dinner on its own, with just a salad or steamed veggie. However, I have some creative tricks up my sleeve to stretch one chicken into two or more meals, saving not only money but time and effort! Here are 6 ideas to make the most of this deli staple:

  1. White Bean Chicken Chili 
  2. Chicken Tortilla Soup: just replace the raw diced chicken with cooked/shredded–you’re halfway done already! 
  3. Enchiladas: Use my grandmother’s red chili recipe, layer corn tortillas with cheese and shredded chicken in a casserole dish, top each layer with a ladle full of chili sauce. Bake at 350 till cheese is melted and sauce is bubbly. 
  4. Easy Cheesy Chicken and Pasta Bake
  5. Chicken and Mushroom Egg Noodles
  6. Homemade Bone Broth: When all the meat is eaten up, use the bones to make a rich, hearty, and healthy soup base that you can freeze and use in many more recipes!
