There are an awful lot of opinions on food in my house. Trying to get a dinner on the table that everyone will like and is somewhat healthy, in under 30 minutes? Quite the challenge. Add the weekday chaos to the equation-kids stressing over homework, little bro trying to watch his cartoons while big sisters are practicing their instruments, Dad trying to make a few trades before the stock market closes, and me…caught in the middle of everyone’s grouchy moods just trying to keep the peace and get dinner made!
Luckily there is one meal that all of us looooove, and every time I make it the mood seems to to get a bit lighter. Sloppy Joes! I’ve tweaked my recipe over the years to have that perfect balance of sweet and tangy, with a hint of smoke and spice. I wouldn’t consider it health food, but it really isn’t all bad if you’re careful to use a natural ketchup made without corn syrup, and extra lean ground beef. It’s a great way to stretch a pound of hamburger so it is very thrifty. It takes me less than 15 minutes to put it all together, and all it needs to round it out are some hearty rolls and a crunchy salad.
