Tasty Tuesday: White Bean Chicken Chili


Isn’t soup season just the best? There is nothing easier than throwing a few ingredients into a big pot, adding some broth, and letting it simmer. Not to mention thrifty, since you can stretch small amounts of meat into many servings. Just add some fresh baked bread, rolls, cornbread or muffins and you’ve got a hearty dinner for even the biggest, hungriest family. 

White Chicken Chili is one of my favorite soups, and it is super-fast, especially if you use leftover cooked chicken/turkey. It’s infinitely adjustable to your family’s tastes and whatever you’ve got in your pantry, so if you’re missing an ingredient just sub something else! No worries! 

Make sure you set out some toppings to stir in–my kids go crazy for any kind of food if they’re allowed to top it and customize it however they like. Some suggestions: chopped green onions, cilantro, sour cream, salsa, shredded cheese, tortilla chips, diced avocado, diced tomatoes, lime wedges, and sliced jalapenos.
